Typically, it's night 2.

It can vary, though. Ours was switched with Pirate night (night 3) for our cruise due to the unfavorable weather forecast (not good for fireworks).

The only thing I can say for sure is I've never seen or read about it being on the first night. Beyond that, it varies. And even after you board and see the planned schedule, it can be altered based on weather. They want the best weather for the pirate deck party and fireworks.
