Question about money in Middle Eastern Countries

We will be calling on several ports in the ME. I do not think that we will be able to go to ATM's since we are on mostly ship excursions. What is the best way to pay for things that we might buy in markets or from small vendors. I am assuming that it is alright to use credit cards in larger stores--is this correct?

The countries we are visiting are: Israel (going to get Sheqels before we leave since I think I might spend the most there), Egypt, Oman, and Jordan.

Thank you for your help.

In Oman small vendors take cash only. The local currency is the Omani Rial (OMR) and it is divided into 1000 Baiza (1000, not 100).

You should also be able to use UAE Dirham (AED). Usual rate is 1 OMR = 10 AED.

Pretty much every shop in malls and more upmarket high street stores take the usual credit cards. AMEX is taken usually in top end stores. You would be able to find ATM's at / near touristy spots, such as the souk to draw cash.
