We will be taking our first cruise on Seabourn next spring on the Encore. On doing our online check in we were given a choice of two bottles to be stocked in our mini bar. Is this a one shot deal or are these restocked as necessary? I really don't think a single bottle of tanquaray (sic?) is going to keep me in gin and tonics for 5 weeks.

They'll keep it stocked up with a new bottle any time you like. By the end of the cruise you may not want to see another GnT for some time.

Yup -- all included, and there is usually a card (or you can ask your steward) for anything else you want or need. Last time I asked for fresh limes and they delivered them every day. They will also freshen/restock the ice in the bar everyday.

I agree with Nola. We never touched the bar in our cabin except for the water. We preferred to have a cocktail at one of the bars.
