Italy to Nice

My husband and I are going from Rome to Nice the first week in October. Are there any excursions offered that we "should not miss?" We are trying to decide

which, if any, we should book ahead.

We organized all of our own excursions on the Nice to Rome itenerary. however I wish we had opted for the Olive Oil excursion through WindStar in Cannes. I spoke to several people who loved it. One even said it was the best excursion they had ever booked.
