Looking to book a private custom tour with stop at Scotchies - Any suggestions?

Fellow cruisers, I am seeking your recommendations/suggestions!

I am sailing on the Allure of the Seas in October, stopping at Falmouth. I have been to this port before and used Liberty Tours to go to the Blue Hole with a stop at Scotchies for lunch. We don't really feel like another "adventure excursion" this time, but we really enjoyed Scotchies and would like to return. We would like to find a reputable company that would allow us to request a customized itinerary, perhaps stops at historic sites, scenic outlooks, beaches and shopping with lunch at our favorite spot for jerk chicken and Red Stripes :)

Has anyone arranged something similar and if yes, with whom?

We hired Errol on our last trip and did a custom tour with Sun Valley Plantation and Blue Hole. We had Scotchie's scheduled, but everyone was too tired so we skipped that.
