The menu is boring in that it is limited to classics that brought Pepin (and Julia Child) to fame in America in the 60s/70s, but Oceania is one of the few places where the classics are still respected and prepared well. Our last land trip to Paris, I couldn't tell whether I was dining in NYC or Chicago or Paris. Modern cuisine has become very international and, in Paris, too many of the classic dishes are being ignored or worse, poorly prepared.

I agree with you about the appeal of classic dishes.

While we enjoy Asian fusion cuisine I do love my Chinese classics even more :D They don't change much and most people don't seem to mind.

Ditto for many French classics in my book.

I've always found the menus for La Reserve to be interesting, but unfortunately I can't drink that much. I wish they had an option for people who would appreciate the menu, but without the wine.
