Is having the chef cook your personal choices still an option?

although we are avid Seabourn fans, for personal and family issues we have not been able to cruise for the last couple years. One of the things that we enjoy most about seabourn was working with the chef to have him create, or re-create, some of our favorites. (A fun example was scallops with bacon brittle. We have enjoyed this at a restaurant in Florida, and on one Sojourn cruise, thoroughly enjoyed the several iterations of this dish The chef provided as an appetizer on a number of different evenings.

 

Does Seabourn still offer the option of talking with the chef about personal favorites and having him provide them?

 

As a total aside, one of our favorite cruises on Seabourn was the presidential election night nine years ago.assuming there would be controversy among the passengers depending on the outcome, we decided to dine in our suite. We ordered five custom design courses to be delivered hourly while we watched the election results. From caviar to softshell crabs, wild mushroom risotto with sweetbreads to lobster tails and finally a bourbon soufflé, it was among the most extraordinary dinners-at sea or on land-that we've ever had. Is this sort of "book-the-cook" still an option?

 

We're planning our next SB cruise but were wondering whether this could be part of it.

On our last Sojourn trip, which was a long one, we made a few special requests for meals. It was not a problem and we had exactly what we wanted. We gave the chef plenty of notice, usually more than 24 hours. The meals were pretty standard, not extravagant. We eat in the MDR. We only ordered different entrees, the appetizer and desert we selected from the menu. We didn't make this a nightly thing and they were happy to accommodate. The F&B manger was awesome. We got a few looks/questions from fellow passengers who subsequently did the same thing.

Great to know it still exists! And we certainly didn't "go overboard" with requests except for election night as noted. A couple of the times, we ask the chef to repeat an extraordinary entrée that had appeared on a previous menu But most nights the available selections more than satisfied us. Our requests largely focused on sweet breads and softshell crab; We always gave the shift the option of preparing them on any upcoming night that was easiest for him. Usually, the menu choices were sufficiently enticing that we would look at each other and say "I guess will have the XYZ AND One of the wonderful standard offerings as well! :-)

When DH and I were on the Quest a few weeks ago, we were sitting in the MDR and patiently waiting for our entree to be delivered. It was one of those minority nights when service personnel could not seem to keep things moving properly.

 

A couple not far from us had 3 different personnel standing next to them for about 25 minutes. The personnel were taking detailed orders for the couple's request for a special order of Indian food to be served to them a couple nights later. They had detailed discussions about all kinds of minutiae on the multi-course menu the couple was ordering, then discussions about which wine would go best with each course.

 

We just wanted our regular entrees to be timely delivered. DH and I considered doing what the couple did, but opted against it. It was not an advertised service, just like the availability of caviar on demand is not advertised, for obvious reasons.
