We went on a swim with the dolphins tour through Black Cat (https://blackcat.co.nz/akaroa-harbour-nature-cruises#/products/15557d45-2533-4aa7-a91d-20edbcb0008f) You catch the boat right on the tender dock. We were there in February and the water was cold and waves high but we had a great time.

Our tour did not start until 11:30 so we had time both before and after the tour to explore the town and have lunch and drinks on the patio of a restaurant overlooking the harbor. We had coffee at Bully Hayes and a great curry lunch on the patio of LaThai (http://www.lathairestaurant.com/).

There were many tour operators advertising right on the tender dock, so if you do not want to plan in advance, I'm sure you can find something fun to do the day you arrive.

We enjoyed shopping at The Artisans Gallery: http://www.stephenrobertson.co.nz/outlets/artisanhttp://www.stephenrobertson.co.nz/outlets/artisans-gallery-akaroa/s-gallery-akaroa/

If you are interested in jewelry, Fire and Ice is worth a look: https://www.fireandice.co.nz/ The merchandise is well organized by type of stone/pearl.

Heaps to do in Akaroa. It is a small walkable town, with good maps available from the tourist office, and good shopping. If you feel like a steep walk up a hill, head to The Giant's House - a local artist creates sculptures covered with mosaics. You can get a feel for it and Akaroa from my travel blog here.
