We are sailing on the Epic on March 1, 2025. Approximately how far in advance of sailing do shore excursions and specialty dining become available for booking?

I have searched NCL's website and this thread and cannot find a clarification. We just booked a cruise on the Epic for March 1, 2025. We part of the Free at Sea is a "2 Meal Dining Package". Does this mean we each get 1 meal or do we each get 2 meals? My first thought was we each get 1 meal making a total of 2 but on my vacation summary it says "2 Meal Dining Package QTY: 2" which leads me to think we each get 2 meals. Someone please clarify for us. Thank you, in advance.

Sailed on the Mardi Gras on April 29th and our Ocean Suite was ready and sign & sail cards were in the mail slot as soon as we boarded.

We were on the same sailing. We had a GREAT time. We enjoyed the ship and it never felt crowded. We haven't booked anything yet but I can see us sailing on her again.
