In the AM you will go thru 3or 4 locks (cant remember excact #), the ship then sails into Lake Gatun, where it stops and all the Excursion People get off via tender boats to go to shore. The Ship then turns around and goes back thru the Locks it came from. It will sail to Colon where later in the day the Excursion People will rejoin the Ship and from there it sails to the next Port.
There are NO 2 days in or close to the canal. so if you want an Excursion book it for that day. Only Excursion People are allowed of the Ship in Lake Gatun

Set Dining is at 5:30 and 8:30 I believe, so some People don't like those times and book Anytime Dining but then choose a time like 6:30 or which ever suits them. With this you most likely to get the same table and Waiter, but not always.
That has thing to do with Good/ Bad Agent, some of them work for big Tavelcompanies which in turn reserve large blocks of rooms. Some are Independent and can't reserve as many. But they will always try to get you xtra OBC, maybe just not as much,
When did you book your Cruise? The Rules were changed in late 2023. I booked Cruise on 14 Nov.23 and they were not included anymore.
AllIncl now includes Classic Drink and Basic WiFi.
As per Cruise Contract, Ports of Call can be changed at anytime. It is not always the Cruiselines choice to do so. Current World Situation requires some adjustments.

You are Elite Level, of course your Wife can order a drink during Elite Happy Hour, that is not tied to having a pkge, and yes She can order a Drink and charge to Ship Account.
Have You paid Final Payment, if not maybe that's the problem, or as AC said no Seat selection due to 3rd party booking. Try EZ Air ask if they can help. If not you might have to wait until check in.
