I am not sure knowing a chefs contract length would help. The chef could have his contract end soon after yoiur cruise, than come back on a new contract during your next cruise.
About 6 months ago john heald posted that they did not want people taking food to go from mdr. That said, just like all other rules, some staff may allow it, especially with a nice tip

I have never seen people leave money for those workers. People always say I give money to the waiters in the MDR, but eat more meals on the lido deck, especially breakfast and lunch.
If you are planning on eating when they open, you should get seated very quickly. probably at two tables next to each other. if you go a little later, that is when you could see a wait.
Then why is it marked sold out for the poster and on many other cruises. If its accepted to wait any length of time, carnival would not list it as sold out. They do it, so the waiting time is acceptable to most.
Because its full. If they just keep letting people go to your time, then the wait time for a table becomes an hour versus 10 to 20 min. how is that right that the people who chose this option when booking now have to wait a longer time. They mark it sold out so people dont wait too long for tables.
