Cruise rates and promotions

Hi:

Will someone please educate me on the various rates and promotions? For example as I am looking at cruises I see "Extra Value" and I recall I have seen an early booking rate.

Carnival deposits are not refundable, right? How do price drops factor into that?

Also, is there a "good" rate or promotion that you look for? I am almost ready to book a cruise and want to make an informed decision.
