Upcoming Norwegian Cruise - Cabo/Mazatlan Excursion Recommendations

My husband and I were exploring the Norwegian offerings for Cabo & Mazatlan excursions for our upcoming Mexican Riviera cruise and we thought that rather than rolling the dice we would check in here and see what excursions you may have tried and LOVED!

We enjoy all activities ranging from low impact (lounging by the pool or relaxing on a boat tour) to the more exciting activities (hiking and exploring ruins, jeep tours).......the only thing we might rule out would be jumping off climbs or flying through the sky :')

So...we would love to hear your recommendations! If you could choose ONE activity for Cabo or Mazatlan, what would you chose?
