Does NCL have floats/mats that we can rent for the water in Great Stirrup? I see some in the pictures but no where are they listed in a description or available for rent on the excursion pages. Thanks.

You can rent floats on GSC fairly easily. I don't know if they allow you to book them on the ship, but you'll be able to find a map and direction signs to help you navigate your way over to the rentals. I believe they rent for about $20-$25 each for the day, using your room key card to pay.

Do they serve lunch or do you need to go back on the ship?

They serve a lovely buffet-style picnic lunch (don't expect fine dining) with BBQ, hamburgers, hot dogs, salads, tropical fruit, and desserts. At one end of the main beach, there is a also a taco stand. During the 2016 renovations, they improved the covered seating area at the buffet/ And now use real dishes and silverware, and have servers clearing dishes for you.

Is the taco stand included or extra charge?

What if you have your own snorkel gear. Do you still have to rent a snorkel vest? How much does that cost?

Taco stand is included. I brought my own gear and snorkeled right from the beach, no charge. There is sort of a natural breakwater so I felt no need for a vest.
