my wife and I are going on Enchantment in Dec. We are thinking about booking onboard and I have heard booking onboard gives some of the best discounts. Is that true? If so, what kind of discounts might we expect?

No discounts, just onboard credit for the future cruise. They will also give you reduced deposit if you opt for non-refundable deposits.

If you are thinking of booking another cruise don’t wait until December. Book it now. If the price drops you can call and get a price drop however odds are that prices will rise negating any extra OBC you receive for booking on board. Booking a refundable deposit will also allow you to cancel your booking should the price stay the same and booking on board for the additional OBC.
