Early arrival in Sidney

We'll arrive at stupid o'clock on a Saturday morning, train to Town Hall, drop-off bags at Hotel and freshen up and then jump on a ferry to Manly, stroll up the Corso, stop-off for a flat white at my favourite coffee bar and wander around the market before grabbing lunch at Shelly Beach.

 

Ahhh, the flat white...

My father in law keeps losing his lolly when the waitresses in Bahrain don't know what that is...

We also get to Sydney at 7. Wondering if a hop on hop off would be too much that day?
Why don't you simply decide on the day? Much will depend on how much sleep you've had overnight. A hop-on hop-off bus is about the least energetic thing you can do to sightsee, so if on the day you don't feel up to it then you're probably going to want to either sleep or lie by the pool anyway.
