1. Arrange for a private tour with one of the local tour companies and tell them that you just want to go to the Hermitage.

2. Arrange for a Russian visa and go to the Hermitage on your own for the day.

Your choices are as GradUT described. I don't know your citizenship but if you are from the US, the visa process can be lengthy and I would recommend that you apply with plenty on time to spare (this is not intended to put you off from securing a visa - I am currently on my 2nd 3-year Russian visa).
