Specialty dining on Voyager class ships?

I'm on a Voyager class ship sailing in November (specifically Adventure OTS which I believe is currently in dry dock getting renovated).

Can anyone tell me generally which specialty restaurants they have on Voyager class ships (other than Johnny Rocket's)?

Are the specialty restaurants really that much better than the MDR? Are the specialty restaurants worth the up charge?

I believe Chops is the counterpart to Cagney's on NCL-- is there anyone that has been to both of these & can compare them directly? Truthfully, I wasn't really impressed with Cagney's. NCL's French Restaurant Le Bistro was very good-- is there an equivalent to something like that on RCCL?

Giovanni's is Italian? Sabor is Spanish/Mexican? Izumi is Japanese? At Izumi, do they perform the 'show' like at a Hibatchi grill?

Are these worth spending the extra money for, compared to the MDR?

Correct, except there is no hibachi on Voyager class ships. To my knowledge, only Oasis class ships have the hibachi in Izumi.

 

Whether they are "worth it" is totally subjective. Give one or more a try, decide for yourself.
