Cheese factory?

What exactly are you looking to do/see?

 

Can't really think of any "cheese factories" -- are you thinking of a "fattoria" (which in Italian means a farm, not a factory)?

 

There are many farms specializing in buffalo mozzarella around Paestum, as mentioned above. It's a fair drive from Naples, though it could be done (and possibly also a quick visit to the outstanding ruins at Paestum) with either a private driver or if you rent a car and drive.

 

Other than that, your best bet might be to try to arrange something on one of your days in Rome. You'd probably have to look online for recommendations in Umbria or Tuscany. I did see an interesting segment on a goat cheese operation in Umbria, link here:https://dreamofitaly.com/tv-show/umbria/

Thanks! I saw something about a place near Naples that does a buffalo mozzarella making class that I thought might be cool. I was hoping for Parmasean but I'd have to give up my day in Florence to pull it off, or extend my trip and add on Parm/Genoa so I think that is out.
