Do they substitute another restaurant to cover your platinum benefit of a meal in La Cucina or Moderno considering neither restaurant is on this ship?

The Spirit does not have Moderno but the Italian restaurant is called La Trattoria instead of La Cucina and you would have your platinum meal there.

Yes, it is useable in La Trattoria. No other option is offered.

I concur what the previous posters said. We are currently on the Spirit and I can confirm we used the La Cucina/Moderno voucher in La Trattoria.

We too used it in the Italian restaurant on the Spirit. They segregate the portside, aft area of the buffet for this restaurant. We had great food, service there when we went late 2015. Food was super hot as they cooked it right there.

Others get a bit turned off by the location though. For us it was also not very busy.

No, the second one has to be used in La Cucina
