There is no guarantee discounts will be available on board.

IF IF IF bookings are sparse, and they are trying to fill it up, they will offer discounts to lure people.

So it all depends.

We were given 50% off both of us on Oasis and that got us to instantly sign up. I've since been told that's a unicorn.

It's $95/PP this week.

We also were offered 50% off for Chef's Table on Oasis. This was mid-way through the cruise, in 2017.

We were offered $70 on embarkation day while sitting in the Suite Lounge. Second cruise there was no discount offer.

Three trips on the big ships and every time while we were sitting at Trellis bar on day one Chefs table was offered at a good discount. Last time on Allure it was 50% off if we did it on night. Just stop one of the waiters, the ones holding a clip board or I pad, in Central Park and hit him up for a discount.
