'Select' tables are the Select Dining Celebrity has initiated. Along with the Traditional Main/Late dining, there is Select Dining where you pick your dining times by reservations you can make before the cruise, while on the cruise or show up without reservation. Haven't tried it yet. Mainly like a regular restaurant. That's what they are referring to as Select Tables, i.e. the area where Select Dining is held.
