As long as you desire. There are no maximum lengths of time that you can stay in the restaurant. The specialty restaurants Re like good restaurants at home. I would budget 2-2.5 hours. Especially in LeBistro and Cagneys. Molderno you can do in an hour but I personally don't like to rush dinner. We were never there longer than 90 minutes, but we were never there less than an hour. There was only one exception to that - that was Teppanyaki, where we sat at our table for 30 minutes past our reservation time with no service because they wanted to fill our table first. We had a 3 hour meal at Teppenyaki ( I know, unusual)....it was not worth our time and the food was way overcooked. Not to say, this is everyone's experience. You could pull this off if you are in the extreme deluxe Owners suites or Haven/Garden with Concierge help. But for the rest of the 99% this is just not workable. Plan the dinner 2 hours before the show time for a nice leisure time enjoying the meal and the company maybe even having an after dinner liquor or extra desert and then have comfortable time to say walk the entire length*** of the ship to the theatre and settle in for the show. *** NCL DAWN & the STAR the MDR is all the way Aft and the Stardust Theatre is all the way Forward and the after dinner - before the shows crowds can pose a gauntlet of traffic milling about. And don't forget the human relief breaks that some folks require and it is prime time folks facilities are in high use. The shows start on time and are independent of dinner reservations ! One hour is never enough time to eat dinner in a restaurant. It's too rushed. Then again we like to linger & always order a bottle of wine. On Epic it takes them forever to bring the wine which was very annoying. The 7 pm shows were a p.i.t.a. given their timing. We had a snack around 4-5 & ate after the shows.
