I'm fine with a couple hours but I don't want it to take up the entire night. I've done it twice and I believe it was 3 - 3 1/2 hours long. The main consideration, don't eat every bite of the first few courses - and you WILL be tempted to because they are really delicious - you really have to pace yourself and not eat everything at first so you can enjoy all of the courses. As I recall, the Chef's table ended around 9:30 or 10pm - plenty of time to do other things afterwards if you are not so full that you just feel like flopping into bed for a long snooze.
