Has anyone ever have to us their services? Are you fully covered for a medical emergency evacuation? Anyone know?

I also have this coverage with AAA.  I've called them to be sure they will provide evacuation services outside of the US and they tell me they provide evacuation outside of the USA as well as the US.  Have never had to use it but I keep the card in my wallet!

Do you know if they cover the entire cost if you need to be evacuated?

As far as I know they cover the entire cost of the evacuation only.  If you have medical costs before it, like a hospital or  MD costs, that would be covered by your medical insurance or travel medical if your medical doesn't cover you out of the US.
