Generally speaking, you need to book an animal encounter in advance.  They usually sell out months in advance.   Since you are traveling during spring break, even the beach day needs to be booked in advance.   It will be crowded and can sell out easily.

There is a blow up water park, not sure if there is a trampoline.  I think it's an extra charge.

You may have to book thru your ship.
