Train to Naples (Napoli Centrale), where you switch to the Circumvesuviana train from Naples to Sorrento. Around 3 hrs in total, under $45 pp The Circumvesuviana is more of a local train - not difficult to spot cos its usually covered in graffiti a-la-Big Apple, it's scruffy, the luggage facilities are limited, and it has a reputation for pick-pockets. But except perhaps late-nite I wouldn't be put off by that, just be more careful and aware than usual. But there's also the option of train as far as Naples Afragola then bus to Sorrento. Sorrento bus station is at Sorrento rail station. Renting a car can be a good option, depending on your plans in Sorrento. Rent in Rome only when you're ready to leave, the route to Naples is simple and with options to explore en-route eg Monte Cassino. The coast road to Sorrento is easy albeit often slow. Check the parking at / near your Sorrento hotel before deciding. There are both pros & cons in exploring places like the Amalfi coast by car or by other means. JB has given you the primary public transit option, fast train to Naples followed by the local train to Sorrento. You can make that second leg comfortable (the basic Circumvesuviana is one of the most uncomfortable/overcrowded/slowest transit options in all of Italy) by taking the Campania Express train but note that there are very few runs each day so you need to be mindful of the timing: https://www.eavsrl.it/web/content/campania-express-2019 For those for whom "best" is defined solely or primarily by cost, there are bus options as well. There are two lines to choose from, Marozzi and Flixbus.
