Tour or fun excursion with walking impaired

We are currently booked on the Norwegian Sun and this will be our first time to Costa Maya. We are traveling with my 70 year old MIL who has had double knee replacement and moves very slowly. She also has trouble with any uneven surfaces, although she can do a flight of stairs with a railing. We would like to do something other than just a beach stop, and have enjoyed tours on previous cruises, but would like some relaxing or even snorkeling. She can get on and off a boat with an easy step off, but not a ladder (learned that the hard way!) Any tips on where to book through?

The easiest walking is around the port complex or taking a tram to Mahahual and walking along the malecon (but that's basically a beach day thing).  There are excursions to Mayan ruins, but the grounds themselves can be uneven.

The ships offer shore snorkeling or power snorkeling up at Uvero Beach, closest to an iron shore in the immediate area.  Not a lot up there, small  refreshment stand, bath rooms etc.  Sand so walking from bus/cattle car could be rough.
