Why do they bother having sommelier?

Can I bring the rest of bottle back to my stateroom for later consumption?

No. Not in the slightest. They are there to take your order, serve you and if required make recommendations for you. The wine pairing comment has been misunderstood and we've now gone off topic! 

 

Drinks prices on Celebrity tend to be quite high. This is a deliberate ploy to encourage you to purchase one of their beverage packages. Take a look at the beverage packages Celebrity offer and you'll be able to decide if they offer good value for you or not. As well as wine they include bottles waters, juices, sodas, tea, coffee, beer, spirits and cocktails as well as smoothies and mocktails. If you do purchase a beverage package you can order wine by the glass in the dining room which will be topped up by your sommelier. 

If you choose to purchase by the bottle you can either leave it with the staff in the restaurant or take it back to your room. The choice is yours.

Last evening hubby and I barbequed some pork kebabs served on parathas with lime and onions. Paired it with a Chardonnay from Australia. Absolutely heavenly.

My complaint is that once you sit down for dinner the servers want you to order immediately.  We tell them we would like to order our wine first and they go get someone but continue to try to get us to order.  We had then decided to go to the Wine Cellar but on Summit it is now mostly a beer bar with no knowledge of wines especially during dining hours.  Also many wines listed as covered under upgraded wine package are not available at many(if not all) bars and dining venues.

 

We certainly get by but truly dislike the speed the restaurant servers are at to get you in and out.

 

It is not as bad as the one time we sailed on Norwegian(had to tip the server to get someone with a wine list) but it is going in that direction.
