Leaving for a 3 week cruise(San Fran, Hawaii, samoa, tongs, NZ) and I am terrified of getting stuck in a storm on the boat. Seems like thunderstorms are a constant in the open ocean this time of hear. Any experiences with weather during January and February?

We did a cruise on the Paul Gauguin from Australia to Tahiti a number of years ago in late January into February.  We had to hide in a harbor in Vanuatu for 2 unscheduled days due to 2 cyclones which caused us to miss almost every port.  Seas were 20-25 feet and the PG is a small ship.  I would never do that again.  That being said, the weather when we arrived in French Polynesia was gorgeous.

Bring Bonine and a positive attitude (maybe a lucky rabbit's foot as well).

I’ve done LA/SF to Hawaii/Tahiti now 4 times almost all December to Jan and only once did we have a problem and it wasn’t even a true problem. Just for a few days we had bright sunny warm weather but 20” seas- results of a storm 1000 miles from us. The ship did lots of rocking but we loved it! And the dining room was near empty. I got a bath of lobster bisque down my dress from a poor waiter who couldn’t stand up straight lol.

i would not give up your cruise! Bad weather can occur anytime of year.
