OK, so the title off  the page is, "Inside Carnival’s massive cruise ship kitchen operations," but I see no difference between Carnival and HAL, except for the number of passengers and Crew.

What differences were you expecting to see? As you point out, the operation to present 2000 dinners as opposed to 5000 is just a matter of scaling up.

That is the only difference I see between the 2. HAL does the exact same, just on a smaller scale.
