What is in the Signature Dining Package? 

I have searched the HAL site, but no luck in finding any details.

Signature Dining Package — includes one evening in the Pinnacle Grill and one in  Canaletto. Booking the package reflects a $4 per person savings. Package is available on every Holland America Line ship. Reservation times confirmed once on board.

OK, but can you choose 2 at Pinnacle and 2 at Canaletto or are you required to each one ?

As stated on HAL's website ... "Enjoy one dinner in the Pinnacle Grill and one dinner at Canaletto."  Seems pretty clear to me.

Yep = one each.  They MAY let you dine twice at the Canaletto, but not twice at the Pinnacle (due to vast price difference).

We love the Canaletto.  It always seems to get lost in the shadow of the other two. (Pinnacle and Tamarind)

Has anyone had luck swapping Pinnacle for Tamarind when getting the Signature Dining Package as a booking promo?

When it says reservation times are confirmed onboard, does that mean HAL assigns them and tells you after you board, or do you arrange the times yourself after you board?

HAL books them for you, and you find the info when you board. These can be altered with a little work.

This is what we plan to do during our March '21 sailing on Koningsdam. We have the SDP as part of the 'Have It All" promo. HAL assigns your day and time for each venue (PG/Canaletto), and you will have an invitation in your cabin when you board.

 

In our case, if we aren't happy with the assigned dates/times, we'll visit the specific dining venue managers, or the 'Front Office' and try to get them rescheduled to something we're more happy with.

 

We've done this before and never had a problem getting them switched.

Koningsdam (and Nieuw Statendam) have a dedicated desk for Speciality Restaurant Dining reservations. It is on Deck 2 midships, outside Ocean Bar and across from Sel de Mer.  This would be the first place to try.  There can be a bit of a line on boarding day.
