If I make some reservations for meals, but change my mind once on board - will they be able to help me change the reservation?

Absolutely!  The concierge in the retreat lounge or even your Butler ( I can’t remember what they are calling them now, but I don’t think it’s “butler”) can help.

I believe they've gone back to "Butler" (it was "Retreat Host," if memory serves).

 Yes, as was said your Butler or the Retreat Concierge can do it.  It's a lot easier and faster to have the Retreat Concierge do it as they have access to the reservation system and if the venue is full, have been able, on at least two occasions, to work with the specialty restaurant to 'squeeze you in.'
