I was talking to my mom tonight and she thought that since we were sailing at the end of Sept that the ship wasn't going to be full. So my question is - if the ship isn't full is it "easier" to get an upgrade or it tends to be more on the full sailings?

Ships generally sail full, year round. We've had our October cruises sold out for up to 5 months in advance. Upgrades don't seem to be better or worse at any tim eof the year.

Very cool, I told my mom that I thought they tend to sail full - she was a non believer. I honestly don't think I would care what I got. We are going so cheaply that beggers can't be choosers.
