Have a coupe de champagne at a bar, a leisurely lunch - perhaps some oysters, a wander round the market, and just soak it all in. I took the train to Nice and then the Bus to Monaco, walked around Monaco, took another bus over to Monaco (not far) then bus back to Villefrance. I think it would easily be possible for you to do Monaco and Monte Carlo from Nice in your time frame.
