Sometimes they go to another ship. They also go home occassionally. :) We've never had the same butler twice, but we HAVE bumped into butlers in the hallways and had them recongnize us. Last year my mom was sailing with my brother (not me) and a butler asked her in the hallway if her daughter was onboard that trip. Assignments are given based on performance - comment cards play a big part. For example, if a waiter is given outstanding comments, they can get larger tables, thereby making more money.
