We were on Mariner last week - the times for open skating were in the afternoon of the 1st sea day and the last sea day. You just show up, sign a waiver, get some skates and go. You do need to wear long pants and bring socks - and I'd bring crew socks, since the skates are boots.... it was fun, although the ice wasn't the best.
