If you go to the buffet or one of the grill options, jeans in the evening are fine on almost any line. Since you'll be on Princess, they do specify that the jeans cannot be frayed at the hem or with holes in them, and they are fine for smart casual evenings in the dining rooms. Jeans are not appropriate on any line for formal evenings, unless formal is optional (like on NCL, but still a few of their venues do specify "no jeans").
