Here is a recipe for Habechuelas (stewed beans). 3 tablespoons olive oil (or canola) 1 3” x 4” piece of smoked cooking ham, cubed 1 cooking green pepper, diced small (these are the long light green ones) 1 medium onion, diced small 2 cloves garlic, mashed 1 can (16 oz) beans boiled in salt water (with liquid) 1 cube chicken or ham broth diluted in ½ cup water ½ cup tomato sauce (Do not use tomato paste) ¼ teasp. dry oregano leaves 1 medium potato, cubed 1 3” x4” piece of squash, cubed (with or without skin) In a deep pot at medium heat, sauté in the oil the cooking ham, until it begins to smell and turn light gold, but are not burnt or hard. Add, the garlic, wait a few seconds (do not let it burn) and add the diced green peppers and the onion. Stir it frequently to avoid burning. This process should take 4 -5 min. Add the beans with their liquid, the diluted chicken or ham broth, the tomato sauce, and the crushed oregano leaves. Stir. Bring to boil at medium heat 2-3 minutes Add the cubed potatoes and squash. Stir. Lower the heat to Medium Lo –do not cover- and let it simmer to a slow boil until the potatoes and pumpkin are tender and the sauce thickens. (About 15-20 minutes) If when you drop in the potatoes and pumpkin there is not enough liquid, add water little by little until there is enough. Correct seasoning. Add salt if needed, a little ground black pepper (if you like) and if it tastes a little acid, add the ½ teaspoon of sugar Link to comment Share on other sites More sharing options...
