We have done two B2Bs through Sydney and on both occasions we had to disembark and then get back on later. It wasn't immediate - we were not permitted to board until the 'official' embarkation time. It was fairly smooth though. We also moved cabins on one of these. We had to pack up everything apart from items hanging in the wardrobe. It was all moved for us to the new cabin which certainly made the process easier.

It's interesting you say all that as I thought it was my imagination!
Our first cruises with Celebrity were out of the US and Europe and, when we first sailed on the Solstice, we were surprised at the difference between sailing out of Australia and the rest of the world. By this, I mean that the ships seem understaffed, the crew don't seem particularly happy and both wine and MDR service are definitely not at the same level. I don't think Celebrity show their best side when they are in Australia and this was markedly evident this year - we sailed on the Constellation out of Singapore in March and then Solstice in October. They were very different experiences - particularly in terms of the three 'less than expected' points raised by the OP.
We also witnessed some of the worst behaviour we've ever seen on board the Solstice this year.
We did ask a couple of staff members about this and they mentioned that the Australia/NZ season is extremely tough - generally speaking, the Australian cruises may have more big drinkers on board and passengers expect more entertainment/events which obviously puts a lot more pressure on the crew. Having paid a little more attention, these did seem to be valid points.

That's not correct I've dined in Qsine, Tuscan and Lawn club with my grand daughter when she was well under 12, only Murano was restricted to 12 & over but not anymore, they changed the policy to any restaurant in late 2015 and the charge is now a flat $10 for 6-12 year olds under 5's are free.
Apologies - I missed that particular announcement! And, unsurprisingly, some of their websites have not been updated.

I believe only children over the age of 12 are allowed. As far as I know the cover charge is the same regardless.

Just an observation on this- I have both Australian & UK appliances. I've noticed that straighteners, hair dryers and curling irons don't quite reach the same temperature when plugged in via an adapter on the ship. If you have good quality appliances it shouldn't make too much difference - just a heads up for you.

Absolutely not! My partner and I are both 35, love to enjoy ourselves and have a bit of fun. Our first ever cruise was on Celebrity and it was enough to get us hooked! It took us less than a week to book our second.
With Celebrity, I think it comes down to what you enjoy - we love nice wines, fine dining and excellent service. We also enjoy nights on the dancefloor, (too many) cocktails and having a bit of adventure. We got all this and more with Celebrity. It's also worth noting that the majority of the staff are reasonably young too and quite enjoy engaging with younger passengers.
Don't expect to have your hand held and be 'entertained' constantly. I think, on Celebrity, you have to be capable of entertaining yourself and not expecting constant stimulation. We wanted this so it suited us well. If you do need never ending distractions then it may not be for you. Don't get me wrong, there is plenty to do and always something to explore but it's not necessarily in your face like with some other lines.
I will say, that on check in for our first cruise, an elderly man tapped my shoulder and asked if I was sure I was queuing for the correct ship! It made me a little nervous, but that was dispelled as soon as I got on board.

I'm so sad that you have had such terrible customer service from Celebrity. On a recent cruise, my OH's tuxedo jacket was ruined by their laundry. There wasn't even mention of a $300 limit...all we had to do was find pricing for similar items and they issued a credit to his CC. This was all done after we disembarked and the value was just shy of $500.
I know a suitcase worth of clothes is worth far, far more but I'd just like to say to keep pushing for the reimbursement you deserve.

We had a friend travelling solo in a Balcony cabin while we were in CC. We asked the Maitre d' and offered to pay. It wasn't an issue and they were more than happy for our friend to join us at no charge.
As with most things, it depends on who you ask and how you phrase it but it worked out for us.
