No, you would not be out of place, My last cruise was the only time that I did not wear a tie to dinner every night.
My son is going on a cruise with us next March. He is the same way. He works as a chemical manager at a CO OP in Nebraska and they never get a chance to dress up. He and his wife a considering going retro and looking for a tux or dinner jacket from the 70"s. They are big disco fans.

And since money is an issue, there are plenty of easy do-it-yourself Alaskan port adventures that will be as much fun as ship's excursions, and a lot cheaper.
Took the HAL Seattle RT as a multi-generational family in 2012 and found that renting a car to go to Mendenhall Glacier worked really well for us. Car rental is walking distance from the pier, and a one-day rental was much more cost effective, with more time at the glacier, than taking a shore excursion would be. Do you know if the Chef's Table is available on all ships/cruise lengths? Did this on RCCL and it was great, would love to do it on my 3-day in Sept.!
