In regards to the bag drop off, many people have commented on CC and TA that they where able to drop their bags at 1pm before officially checking in and where able to explore Papeete before returning for check in later. So nott sure why it was different in your case. I have even asked Windstar and they have confirmed that yes one can drop off bags before check in.

If we just dropped off our bags at 1pm (not necessarily formally check in since the rooms will not be ready), which is the time they start boarding, what time do we need to be back on ship. The ship is scheduled to leave midnight. Can we just return in the evening, say for dinner and at that time formally check in.

I believe your departure is not at 6pm but instead at 11PM. Also, the arrival back to Tahiti is 8am not 10am. Since you will be already at the docks when you get back fro the Wind spirit cruise I would take a ferry over Moorea and spend the night there (?hilton moorea). This way you basically have all Friday and a lot of Saturday to enjoy Moorea. There are 2 ferry that go between Tahiti and Moorea, they depart thahiti at 9:45am, 11;30am and 12:45am. Keep planning
