In Costa Rica US Dollars were accepted everywhere. Checks in restaurants and other retailers show the amount in both Dollars and Colons.
I agree with both your points on both Panama and Costa Rica. Regarding Panama, my only thing to add would be sometimes you might pay with US, but I found they might try and give you change back in Panama currency as its basically on par with each other. Maybe it's no big deal for someone there for an extended stay. You should request your change in US if you don't want to be left with something that might be difficult to convert back.

Yes you can purchase it for one day (24 hour period) as needed. One device at a time but you can log on with multiple devices, just not at the same time. Never seen a 'deal' offered for it, just the $35/day. It works well (Starlink)
