If I get the $500 card and apply it for Cheers which is about $460 for a 4 day..What happens to the other $40? Can I get that back at the end of the cruise?
It stays on the gift card. I'd recommend putting it into cruise cash for your S&S card. That's what we did.

Maybe this is a good place to ask:
I've seen a couple of you say you can use gift cards for your s&s card....how is that done exactly? Do you use them to buy cruise cash? Does that automatically go on your s&s card? And do you still have to use a credit card as financial backing to the s&s card? (Sorry, I'm new to this)

Hah, for those that are quick to assume I meant play it out loud.....No. My question was to how loud the carnival music actually is across the boat. If it's so loud that earbuds are of no use, then I would have just listened to it in my cabin.

I've been slowly putting together a playlist on Spotify (I intend to download them to my phone so I won't have to use internet) of ~100 songs to listen to using my wireless earbuds.
For example and for those interested, the list includes:
Rolling Stones - Beast of Burden
The Police - Walking on the Moon
Eric Burdon - Spill the Wine
Bob Marley - Jammin'
...just to name a few...
My question is, just how loud is the music played on the cruise? Would there even be a need for me to bring my earbuds at all? Mostly they would be used when relaxing in the sun or Serenity area.

I've actually been thinking about this very thing. I have some type of claustrophobia as well. Sometimes, when I'm traveling down the interstate in my Jeep, I'll suddenly feel very closed in. I have to stop on the side of the road and walk around beside the interstate to get a feeling of space.
I watched a few videos of cruise room reviews as well as ship walkthroughs (Carnival's Dream). My wife and I are scheduled to go on our first in July, so I thought it would be beneficial to become a little familiar with what we're getting into. When I saw the couple walk to the balcony and show the view out on the vast ocean, I put myself in that situation. As something I thought I would relish (no responsibilities, no easily available ways to be contacted, no child, no pressure from work, etc.).....I was suddenly overcome with this tense feeling of being SO isolated and out of control, that I can only describe it as a form of claustrophobia. Yeah there's room and people...but as a collective, you're effectively cutoff from all that you know. It got to me. We're still going on the cruise, of course, but I can relate.

My wife and I have a simple all inclusive resort excursion planned. Before we return to the ship, we want to do the rum cake tasting, buy some Hennessey White, Authentic Jamaican Jerk sauce, and a couple other souvenirs (shot glass yada-yada). Is there any way anyone can give me directions on where this type of shopping could be done close to or AT the port area?

Thank you all for the fast responses! This is our first cruise and is for our 10 year anniversary and will be the first real vacation we have had since our honeymoon so we're a nice level of stoked 30 somethings.
We will be driving into New Orleans. Her family is from Baton Rouge, but I think we'll be staying at the Harrah's close to the port in NO. I'd heard that they allow you to park for the duration of the cruise if you stay a night? Not sure on that one, yet.
I know it's a cashless system, so I'm curious what the casino uses? I like to play craps and planned on losing a couple hundred at some point there, but I'm not sure if I need to load up my SS card or what.

My wife and I have a balcony room on the Dream, Deck 7. Did I do well? I'd heard that because the suites are on this floor that the stewards would probably be better (if there is a thing). Also, that it is insulated by rooms above and below for reduction of noise.
We know very little of the eating situation, but from research and reading threads here, it doesn't seem that we'll starve by a long shot. Are reservations needed to be made for the MDR for dinner? How expensive are the dining options that aren't included with fare (Bonsai Sushi for example)?
We applied for passports two weeks ago, so we can't check-in online yet. After doing so, will we be able to see what each day's activities are that have been planned? I'd like to know which night is considered elegant, which shows are available on which nights, which movies are showing on certain nights, etc.
We plan to purchase the middle wifi package. This is due to mainly wanting those that are watching our (then)3yo daughter having a means to contact us. We know we can use the ship's app to chat ($5). Would it be smarter for just ONE of us to get the internet package since we can communicate with the app?
We will also be purchasing the Cheers! package. When does it begin...as soon as we board...as soon as we leave New Orleans...some other time?
