I just want to sit in a hot tub without being splashed. I don’t let my kids in the hot tub when we bring them.

Bummer. On the Triumph it was packed with kids. Every pool and hot tub. 

Is the pool and hot tubs adult only on this ship?

It does not. Good luck finding a hot tub not full of kids. We sailed in August and the kids were out of control. I brought my children, but they were supervised and not allowed near the hot tubs. I feel they are for adults to get away from splashing.

We will be sailing on the Freedom in May. It will be our third time in Cozumel, so we plan to just do our own thing there.

What are good excursions in Jamaica and Grand Cayman? I would like to swim with dolphins in one of the ports. My husband feels Dunn's River is too long of a commute from what we've read on one excursion description.
