(By the way, I had a bit of a shock a few minutes ago. When I tried to reply to the post above, I got a message that I had been blocked. Could not figure out why that might be. I tried my reply again and it went through. I could not imagine that I had said anything that would get me blocked.)
I'm not sure what your timing was but I've found that if I'm hitting reply too fast, I get blocked. There's a minimum time set between posts, probably to reduce spam. I can't remember if I noticed it via Tapatalk or directly here but it's not uncommon for sites like this. That would explain why your post went through the second time -- you'd probably passed the minimum time set.

Both my husband and I got surveys (to my email address). I did find it odd though how everything was under my husband’s name despite the fact that I booked and paid for the cruise with a cc only in my name.

The white bordeaux you are thinking of is Clarendelle, Sauv Blanc, Bordeaux, France. I don't find it to be very Sauv Blanc / Sancerre tasting, despite the Sauv Blanc listing but apparently that's what it is. At the beginning of our cruise, a very nice lady suggested it to me when I turned down what the bartender offered me and it's what I've been drinking onboard ever since.

A note about the fish ... the salmon is farmed and “seared rare” really means cooked through on the Encore. The only place I’ve seen that (re tuna) before is Disneyland’s Grand Californian, and I assumed it was for liability. Since the Encore serves sushi, liability doesn’t seem a good excuse for overcooked tuna. The menu and the server were clear in their description but what appeared was most certainly not seared or rare. I asked for a salad and the server insisted on bringing me a second go at the tuna and I accepted. Next time I’ll insist on the salad — the second go was only slightly more pink, and I mean very barely, than the first.

After asking multiple servers and the sommelier, I was finally able to obtain the complementary wine list at the Square. I swear the servers and sommelier are reluctant to provide any additional wine if it’s not the specific days’ selecrion or not premium. Every time I ask, I’m met with a disgruntled look.

Agree with Catlover on the music ... it was an odd choice given the tone of the restaurant. Not what I would have chosen for that particular venue at all.

I’ve been unable to obtain a list of the included wines. They serve a lot of Oyster Bay Sauv Blanc (New Zealand). They also have an Italian Chardonnay (it is oaky) and Santa Margherita Pinot Grigio. They have at least 2 roses, neither are dry — even the one from Provence is very sweet.
The only red we’ve had came from the premium menu so I can’t comment on the reds.
I haven’t paid much attention to the liquor although I did note they have Tito’s and Grey Goose.
Champagne is a headache inducing Nicholas Fuillette (sp?)

Sailing on encore in a month so thank you for this useful post! Perhaps the menu will change ... now more importantly, could you kindly post the alcohol list?
I’ve got pics from the premium list (I’ll post in a new post) but I’ve been unable to get a list of the included wines. I’ve asked a couple of times and each time I get a different, not very satisfactory, answer

After seeing the steak, I’d suggest sharing it. If you do the Lobster Thermador (aka lobster with croutons), you’ll need one for each of you, as it’s not large.

Yes, we very much enjoyed it. I just posted a separate post with an expanded menu. The pics above are the ones in the room and not complete.
It is open for lunch although we haven’t yet been. It’s my understanding that Sushi does bento for lunch.

No, you do not need to pay for mixed drinks such as a daquiri. Do be aware, if you ask for a margarita, they will give you a frozen, blended thing so if you're looking for on-the-rocks and not too sweet, you'll want to give them some direction.
