Holland America always has a Catholic priest on board.  In my experience, most of the priests offer daily Mass in addition to weekend Mass.  We recently completed a 73 day cruise and Mass was offered every day.  That's one of the reasons that HAL is our preferred line.

Should I tip bag porters / dock workers in CAD or USD? I will have both available.

These workers live in Canada.  Use Canadian, but be aware of the exchange rate.  A $5.00 US tip is worth more than a $5.00 Canadian tip, so tip accordingly.

I suggest you ask the Canada Border Services Agency https://www.cbsa-asfc.gc.ca/menu-eng.html.  They'll give you the rules and answer all your questions.  Cannabis is an absolute no-no.
