  1. CARNIVAL'S FLOURLESS CHOCOLATE CAKE

     

    Unsweetened cocoa powder

    2 (8-oz.) packages semisweet chocolate squares, coarsely chopped

    1/2 cup butter - do not use margarine

    5 large eggs, separated

    1 tablespoon vanilla extract

    1/4 cup sugar

     

    Grease a 9-inch springform pan, and dust with unsweetened cocoa powder.

     

    Melt chopped chocolate and butter in a heavy saucepan over low heat, stirring until smooth.

     

    Whisk together egg yolks and vanilla in a large bowl. Gradually stir in warm chocolate mixture, whisking until well blended.

     

    Beat egg whites at high speed with electric mixer until soft peaks form. Gradually add sugar, beating until sugar dissolves and stiff peaks form. Fold one-third beaten egg white mixture into chocolate mixture; gently fold in remaining egg white mixture just until blended. Spoon batter into prepared pan, spreading evenly.

     

    Bake at 375 degrees for 25 minutes. (Do not overbake!) Let stand in pan on a wire rack 10 minutes before removing sides of pan

     

    Thank you so much for posting this recipe!! I have made it twice now and both times it turned out fantastic! The only thing I omitted was the 1/4 cup of sugar and I used Splenda instead (a little less than 1/4 cup). This is a good recipe for anyone who is diabetic or watching their carb intake. Add a scoop of lo-carb vanilla ice cream and you're in heaven!

     

    P.S. I used 1-1/2 bags of 60% cocoa semi-sweet chocolate chips instead of the squares.

  2. I've been on many cruises and have taken as many as 12 bottles of wine. Gave our bags to the porter with a nice tip and we've always gotten our stuff and never a broken bottle. I wrap and tape each bottle with bubble wrap. This time, I'm taking the boxed wine and putting the inner bag inside a large ziplock bag. I don't want to hassle with bottles this time.

  3. Well, it's been 2 days since my nightmare visit to the NP. My blood pressure is still very high UNTIL I wrote a complaint letter and made a phone call to the head honcho. I am glad I did and the supervisor was appalled at what happened to me. My BP has almost returned to normal and by tomorrow, it will be back where it was before. My blood sugar is perfect and I don't care what they say, I'm not eating carbs. I'm keeping records of everything so when I see the doctor next month, he will see my progress. Hopefully, he will be supportive of the Atkins way of eating.

     

    Anyone here heard of Dr. Richard K. Bernstein? He has written books and articles on diabetes. He's just like Dr. Atkins! Here's a good article he wrote that I forwarded to the fat dietician.

  4. Well, today was not a good news day only because the NP (nurse practitioner) that I have been seeing, flipped when I told him I was doing Atkins. My appointment was at 9:00 a.m. and I sat for 2-1/2 hours in a cold room until he saw me. I was p*ssed and my blood pressure was very high! He said my blood pressure was high because of doing the Atkins diet. My blood sugar has been perfect since the last visit but all he could focus on was my blood pressure. I told him I didn't appreciate waiting in a cold room for 2-1/2 hours and that my appointment was for 9:00 a.m. not 11:30 a.m. He told me to eat more carbs and my blood pressure will return to normal! Well, I have a doctors appointment next month with a REAL intern MD. Sorry for the rant, but I've got no one else to vent to, I'm discouraged.:(

  5. Hi everyone! Just checking in! I've lost 9 lbs so far and I see the doctor in 1 week, I can't wait to see his reaction to that and to the glucose readings. I'm going to work on that dietician, she can't dispute the results of Atkins. Just as an experiment, one day I followed her advice and ate 60 carbs per meal. I felt horrible and my blood sugar shot sky high! I recorded it and everything I ate, just to show her not everyone can eat like that and maintain a healthy weight and blood sugar level! Maybe I'm becoming too obsessive about being in control of this disease.:(

     

    Can't wait to go cruising, I need a vacation! Thanks to everyone for your inspiring stories, it keeps me keeping on.

  6. Heh everyone...Just checking in to say hi and I'm doing very well on the Atkins! My blood sugar is running around 109 consistently, and Atkins is working great! I can't wait to go back to the dietician and wave the results in front of her. She wrote on the diet chart for me to consume up to 60 grams of carbs per meal! LOL! I don't go over 10 carbs a meal and my blood sugar isn't going out of whack. I also bought some of the Atkins chocolate bars and DH and I split one in the evenings, and they satisfy my sweet tooth and it doesn't elevate my blood sugar at all. I'll be curious as to what the dietician has to say about my progress, maybe I'll be an inspiration to her to lose 200lbs! :eek: :D

  7. Thanks for the encouragement, I need all I can get. I'm going to meet with the dietician in about 3 weeks. I test my blood sugar twice a day and they have a computer that they read my readings with to see where I'm at and if my meds need adjusting. It's pretty hard sitting there listening to this dietician cuz she is closed minded to Atkins on ANYTHING! And, she's 5'4" and weighs an easy 350+ pounds! It's hard to hold my tongue when talking to her. My blood sugar is staying under 120 so Atkins does work and my DH is doing the diet with me. That really helps there. I will check in here from time-to-time on my progress. 70 more days............yeah!

  8. I just found out I'm Diabetic Type 2, so I'm going to do Atkins much to the dislike of my dietician. DH and I did Atkins a couple years ago and lost weight big time. We're going on the Carnival Spirit Nov.30, so I want to lose some weight and get to feeling better. I just bought Atkins for Life today, it has meal plans, etc., so it will be easy to follow and stick to it. Finding out I was diabetic was a shock, but I intend to have these meds eliminated if not get cut back severally in a few months. Eating low carb on cruises is easy....except for the fresh bread and butter is a bummer for me. There's these wraps I get called "Light Flat Out Wraps," which have 6 net carbs and 90 calories per piece. They have 9 grams of fiber and 0 grams of sugar. They make the best wraps for turkey, roast beef, etc. Even my DH likes them. I thinking about spreading some cheese on them and sprinkle with garlic powder for a grilled cheese wrap.

     

    I enjoyed reading some of your thoughts and experiences here on Atkins, it has me enthused.
