    RCI Cranberry Bread (Halved & Revised for Bread Machine)

     

    ½ cup water, lukewarm

    ¼ cup milk

    1 tablespoon rum or Amaretto

    2 eggs

    1 tsp. vanilla extract

    ½ stick butter (1/4 cup), room temp.

    Zest of ½ lemon

    1 pound flour (about 2 ¼ cups)

    2 Tbsp. sugar

    ¼ tsp. salt

    1 (¼ -ounce) package dry yeast

    1/4 cup raisins

    ½ cup dried cranberries

    1 egg yolk, beaten lightly

    Sliced almonds

     

    Note: Follow your own bread machine’s sequence of ingredients if it differs from mine!

     

    1. Place liquid ingredients in bread machine bowl, then add softened butter and lemon zest.

    2. Mix flour, sugar, and salt lightly, then spoon into bread machine bowl. Sprinkle yeast on top of flour.

    3. Turn machine on, set on “Dough” cycle. After dough is thoroughly mixed, open lid and add cranberries and raisins or nuts. Continue cycle.

    4. At end of Dough cycle, remove dough from machine. Lightly knead on floured surface. Divide dough into 6 roughly equal portions. Roll each portion into a rope about 15-18 inches long.

    5. Line a large baking sheet with parchment paper, and spray with nonstick spray. Transfer 3 rolls to the baking sheet (crosswise on baking sheet, or use 2 separate baking sheets) and braid, tucking the ends under. Repeat with remaining 3 rolls. Cover and let rise for 20 minutes.

    6. Brush braids with egg yolk and let rise for another 10 minutes. Brush with egg yolk a second time and sprinkle with slivered almonds.

    7. Bake at 400 degrees for 18-20 minutes, until nicely golden or until loaves sound hollow when their undersides are thumped. Note: watch closely for the last 5 minutes – if bread starts to get too brown, cover loosely with foil.

    8. Cool on wire racks completely before slicing.

     

    Special treat: Slice into 1 inch thick slices and use for French Toast!

  2. We had a very easy time of it getting off the Breeze a couple of weeks ago. It took no time at all and that was with my husband not having his driver's license (he left it at the Covid testing site before we left and they let him on, and off, with a picture of it on our phone). No custom's forms to fill out, no long lines. So much better than what Galveston was like in the past.

    My mom got married on the Splendour of the Seas and was on the love and marriage show. All her kids were on board and I swear every time I turned on the tv, there was my mom talking about what they did in the neighbor's pool! It was a great wedding. They got married before the ship sailed and that allowed guests who weren't sailing with us to be there. I think it was 2004 ish so things may have changed.

  4. If you've been debating whether or not to cruise right now, do it!

    First of all, we were stressed to the hilt with a move into a new (fixer upper house) and have another cruise booked

    for the end of November but the rate for this one was unbeatable so we did it.

    First the bad:
    CVS lost my husband's Covid test results, we could NOT get them. Paid $300 the night before we left to get a rapid test.

    Hopefully his insurance will reimburse us but if not, it was worth it.

    Then we get in line to get on the ship and he realizes he doesn't have his driver's license. That was HORRIBLE. I didn't think they'd let us on

    without it but they did! We figured out where it was (Covid testing place) and they texted a picture of it and the staff was amazing

    and kind (especially since it was our long delayed honeymoon).

     

    After that huge and awful stress, every thing else was wonderful.

    The food in the dining room at dinner the first night was not good at all so we did buffet and deli & pizza the rest of the trip for dinner.

    The sea day brunch was fantastic.

    Staff was so friendly and happy to see us.

    Cookie the cruise director is the only cruise director I've ever really liked or noticed. He is so fun!

    Cozumel was weird, we were the only ship there, it was sad to see. The vendors were way more aggressive than usual. We got some great deals.

    Ate lunch, shopped and got back on board.

    We had an inside cabin and it was perfectly fine.

    Truly a great trip.

  5. Before I quit drinking and before the internet, I used to go to the library to look at cruise planning books and I'd always see sample programs with "Friends of Bill W" meetings. I thought "man, that guy must be rich and he has so many friends."

    Been Bill's friend now for 23 years and I've attended meetings on various cruise lines. I learned to do my time dining if I want to make a meeting because they always seem to schedule meetings when I should be at dinner or getting ready.        As far as non alcoholic drinks go, tonic and lime or a virgin pina colada if I want something sweet.

    Well I am scheduled for March 27,2021 but now that cruises have been cancelled up to end of January plus the fact that its out of Los Angeles (which I'm pretty sure isn't going to be one of the startup ports)  I am researching new cruises in November out of Orlando so I will be ready to move it for the 4th time when Carnival sends me the cancellation email. Sigh.....more headaches waiting for refunds to credit cards and re purchasing all the extras again.  Wish they could just transfer EVERYTHING over.  This will be the 4th time waiting for refunds and then repurchasing Cheers, FTTF, excursions, cruise cash etc. etc. etc.

    The first time I did this, they refunded excursions, etc. This time they transferred all of it over (just did this today). I had to wait on hold for maybe 5 minutes while they did it.

  7. We did the same excursions as my mom and her husband on Princess in March in different groups twice. We never saw each other because they were put in a group that did the excursion itinerary in reverse order to ours both times. I'd contact the shore excursion desk just to be sure.
