We are long time Princess cruisers and honestly, have never been disappointed by the food on Princess. Of course, everyone has their own idea of what is good. I haven't been on the Diamond yet so I can't comment one way or another. However, perhaps I can ease your mind by telling you some the restaurants I consider "good" and perhaps that will aid in your decision. While I am a New Yorker, I am familiar with your area so I will include restaurants in the LA area I have enjoyed.
I have eaten at Piatti in Thousand Oaks which I would rate "ok" (keep in mind I'm an Italian/American from NY) - finding "good" Italian food in CA can be hard.
Piatti is certainly better than Olive Garden or Macaroni Grill, at least to my taste buds. I have dined at the Maple Drive Restaurant in Beverly Hills and found the menu very appealing and the food to be good quality - however, this restaurant is high end, and, I can say I feel like I got my money's worth.
I'm not sure if you ever get up to the Napa area but, there I particularly enjoy the restaurant French Laundry - one word - outstanding.
Now, I don't pretend to be a food expert nor a food critic, all I am saying, these are the restaurants I've enjoyed in California and perhaps based upon my reviews you might find you like the food on Princess. Hope this helps a bit.
